I tried to make the dough with 1/2 whole wheat and it was just too dry to work well. I had to toss some dough and only made one small Galette. I like the idea of a rustic pie and both of your look amazing, pretty folds and the leaking is part of it. If Galettes don't leak, something's wrong. I am driving through Colorado peach country this week-end and hope to follow your lead. Stopping to buy some good peaches to try this again using a different pastry dough.
